Fish and Chips (Cod) Recipe

When Prince Harry made his recent trip to the US, one local NY restaurant prepared a classic Fish and Chips dish – Mat Arnfield from the famous “A Salt and Battery” restaurant in the West Village prepared to the food and shared the recipe below.

It’s fast, tasty and simple.

Fish and Chips Recipe:


*8 oz all-purpose flour
*Pinch of salt
*1 tsp baking powder
*5oz seltzer water
*5oz beer
*4 (6 oz) filets of cod or pollock
*Vegetable oil
*Malt vinegar

Put dry ingredients in a bowl. Add seltzer and beer. Whisk until lumps are gone.

Coat the filets of cod. Add vegetable oil and fill halfway up the pan.

Flour the fish and shake off excess. Put in batter.

Gently lay into oil (oil should be about 360 degrees) 4-6 minutes.

Drain on paper towel.


Put one and a half pounds of hand-cut pre-blanched Idaho potatoes (blanching means to fry the chips ahead of time for 4-5 minutes) in a separate pan of oil (325 degrees).

Put chips in and cook for 2-3 minutes or until brown. Drain. Plate chips.

Serve fish on top. Serve with salt and malt vinegar. Serves 4.
