Baked Cod Fish Recipe

This is a nice and easy baked cod recipe. A very healthy and filling dish.


2 lbs. boneless cod or haddock fillets
2 tbsp. butter, melted
2 tbsp. olive oil
2 tbsp. pine nuts
1/2 tsp. kosher salt
2 cloves garlic, chopped
2 cups diced canned tomatoes, drained
1/4 cup raisins


Heat oven to 400 °F. Pat fish with paper towels; place in a shallow roasting pan. Brush with butter and sprinkle with salt. Bake 20 minutes or until fish flakes. Heat oil and garlic in a saucepan until garlic is aromatic. Add tomatoes, nuts and raisins and stir until blended. Serve hot over baked fish.
