Cod Fish Cakes

Cod Fish Cakes are the ultimate comfort food, and aside from a bit of pre-planning that’s needed, they are also really easy to make. Cod Fish Cakes can also be an effective way to create something new from any leftover fish or mashed potatoes that you may have.


1 lb of cod fillets
2 medium-sized russett potatoes
1 cup bread crumbs
1/4 cup chopped fresh parsley
2 Tbsp freshly grated Parmesan cheese
2 garlic cloves, finely chopped
1 teaspoon salt
1/2 teaspoon pepper
2 eggs, lightly beaten
Grapeseed oil, or other high smoke point oil such as canola oil, for frying


1 Boil and mash the potatoes, let them stand.

2 Boil the codfish – you should boli the fish until it easily flakes. Drain the water from the fish and then be sure to flake the fish with a fork. Whilst you are flaking the boiled cod you should also remove all the bones. Nobody wants a bone in a fish cake!

3 Next, mix and knead the flaked codfish with the mashed potatoes and the rest of the ingredients (the lightly beaten eggs, the cloves, parsley etc…) together by hand. If the mixture is too crumbly, add another egg. If too sticky, add some more bread crumbs.

4 Shape the mixture into cakes and fry them on medium high heat in a skillet coated with oil.

Makes 12 fish cakes. Serves 4-6.
