Nick Nairn’s Cod Ceviche with Beetroot

Nick takes time away from the TV to share this recipe for Cod Ceviche with Beetroot online.

Despite sounding potentially complex, this is actually a refreshingly easy recipe to create and will impress any guests that you serve it to.

Ingredients
1 tsp sesame oil
1 lime, juice only
pinch sugar
50g/1¾oz baby beetroot, peeled and grated
50g/1¾oz cod, finely sliced
To serve
2 mint leaves
1 scotch bonnet chilli stalk

Cooking Instructions:
1. In a small bowl mix together the oil, lime juice, chilli and sugar.
2. Add the grated beetroot and cod and leave to cure for 10 minutes.
3. To serve, spoon the mixture onto a small plate and garnish with the mint leaves and chilli stalk.
