Paul Rankin is a Michelin Star award winning chef from Northern Ireland. Paul Rankin has had a huge influence on Ireland’s culinary culture and people travel from all over the country to his restaturant. Here Paul Rankin share with us his recipe for ‘stuffed chillies with cod fish’.

Paul Rankin’s stuffed chillies with cod recipe:

50g/1¾oz cod
1 tsp fresh coriander
1 tsp chives
½ garlic clove
pinch of ginger
3 cherry bomb chillies, seeded and left whole
vegetable oil, for frying

To serve
5 tbsp chives, chopped
2 tbsp honey
2 tbsp soy sauce

Cooking Instructions:
1. Preheat the oven 200C/400F/Gas 6.
2. To make the stuffed chillies, in a blender mix the cod with the coriander, chives, garlic and ginger to form a thick paste.
3. Stuff this mixture into the chillies.
4. Heat a frying pan with oil, place the chillies into a hot oven for 3-4 minutes.
5. When ready serve the chillies in a dish. Top with the chives and the honey. Drizzle with soy sauce.
