Simon Rimmer’s Fillet of Cod with Bombay Potatoes

Simon Rimmer is the owner and chef of two multi award-winning restaurants – Greens in Manchester (vegetarian) and Earle in Hale (non-vegetarian). Simon Rimmer is most famous for his vegetarian dishes and recipes. This is Rimmer’s recipe for a simple, yet impressive Fillet of Cod with Bombay Potatoes.


For the potatoes

  • 75ml/2½fl oz oil
  • 450g/1lb potatoes, peeled and cut into 2.5cm/1in cubes
  • 1 tsp mustard seeds
  • 1 red bird’s-eye chilli, finely chopped
  • 1 tsp ground turmeric
  • small handful chopped fresh coriander
  • salt and freshly ground black pepper
  • 1 garlic clove, sliced

For the cod

  • 200g/7oz plain flour
  • 1 tbsp chilli powder
  • 4 cod fillets, each about 150g/5¼oz
  • oil, for frying

Extras for flair and finish

  • lime wedges
  • chopped fresh coriander


How to cook Fillet of Cod with Bombay Potatoes:

1. Preheat the oven to 200C/400F/Gas 6.
2. For the potatoes, place the oil in an ovenproof dish and heat in the oven until smoking.
3. Carefully add the potatoes and mustard seeds to the hot oil, stir well and place back in the oven for ten minutes. Be careful because the mustard seeds will pop when they hit the hot oil, so be sure to use an oven glove.
4. Add the chilli, ground turmeric, coriander and salt and freshly ground black pepper to the potatoes. Mix to ensure an even coating, then return to the oven and roast for a further 25 minutes.
5. For the cod, place the flour and chilli powder into a bowl and mix well. Dredge the cod fillets in the flour mixture, shaking off any excess.
6. Heat some oil in an ovenproof frying pan until medium-hot. Place the cod fillets into the pan and fry for three minutes on each side, turning carefully with a fish slice.
7. Place the cod fillets into the oven for a further 3-4 minutes, or until cooked through.
8. To serve, divide the Bombay potatoes among four serving plates. Place a cod fillet on top and garnish with lime and coriander.
